See this yummy dip? Well, we have Stan Starsky @ Peace, Love and Snacks to thank for it. Stan contacted me last month asking me to do a podcast. For years, he owned a vending machine business. Then one day he realized he really didn’t like what types of foods he was peddling. So he quit and started making his own recipes, which lead to Peace, Love and Snacks – Taking Revenge Against Junk Food – a lighthearted snack cookbook with super simple, kid-friendly recipes including ‘fun’ sauces, dips and granolas among other things.

Stan also has been interviewing dietitians on a variety of topics then posting the transcripts to his blog. We had a great chat about how cooking and being comfortable in the kitchen is really key to eating healthy because you’ll be eating deliciously as well. Click here to read more.

Back to the cookbook. There were so many fun snack ideas – I wanted to make the “Cantaloupe, So Stay in Town and Get Married” sauce just from the title alone. In the end I settled for this delish Avocado Vanilla Dip because I had all the ingredients on hand and I’m obsessed with all things avocado lately.

Stan recommended pairing it with tropical fruit and it was so tasty for dipping chunks of pineapple, mango and banana – my 5 year old got into it, too. Which is the entire point – cooking doesn’t have to be fancy or tricky – sometimes the simplest, healthiest recipes are the best tasting too.

Description

Avocado shines in a sweet dip for tropical fruit – a recipe from Peace, Love & Snacks Cookbook


Ingredients

Scale
  • 1 avocado, pitted
  • 1/2 cup light coconut milk
  • 1 tablespoon honey
  • 1/4 teaspoon vanilla extract
  • Chunks of tropical fruit like pineapple, mango and banana

Instructions

  1. Thoroughly mash the avocado in a bowl.
  2. Mix in coconut milk.
  3. Mix in honey and vanilla.
  4. Serve cold as a dip for fruit like pineapple, mango and banana
