Grilled Potato & Zucchini Caprese Salad – I made this for The Recipe ReDux US Potato Board recipe challenge last year and loved it so much, I brought to several cookouts throughout the summer.
Philly Cheesesteak Potato Packets – These super easy grilling packets give you the flavor of a cheesesteak without the extra fat calories.
Grilled Zucchini with Kalamata Olives – If you like Greek flavors, you’ll love this recipe, especially when that summer glut of zucchini hits.
Potato & Summer Squash Gratin with Goat Cheese – Ok, technically this one isn’t grilled but it’s a terrific dish for any summer eating occasion.
Grilled Watermelon Salad – So yummy! You MUST try grilling fruit this summer and watermelon is a great place to start.
