When it comes to eggs, I generally don’t go runny.

Growing up, I ate my fair share of poached eggs and sunny side up eggs but nowadays, I’m a hard-cooked kind of gal.

It’s raw egg recipes like any type of batter before it’s cooked, whipped egg white concoctions (eggnog, tiramisu, etc.) or a true Caesar salad dressing that I’m gung ho into…and flirting with risk of food poisoning.

So, at the risk of spaghetti overload, today I bring you a twist on the traditional pasta dish that uses raw eggs to create a sauce that takes just minutes to whip up.

Carbonara sauce is traditionally made with eggs, cheese and bacon so purists may take offense to my addition of tomatoes, garlic scapes and Italian parsley. But anytime I can amp up a recipe with extra seasonal veggies and herbs, I’m going for it.

Spaghetti Carbonara with Tomatoes {The Recipe ReDux}

Description

Pasteurized eggs take the worry out of this super easy Spaghetti Carbonara that’s tossed with tomatoes, garlic scapes and parsley.


Ingredients

Scale
  • 12 ounces whole grain spaghetti or linguine (I use half regular and half whole wheat)
  • 4 slices center-cut bacon
  • 1 garlic clove or garlic scape, minced
  • 2 Davidson’s Safest Choice whole eggs + 1 Safest Choice yolk, beaten together
  • 1/2 cup grated Parmesan or Romano cheese
  • 1/2 teaspoon black pepper
  • 2 cups chopped grape or cherry tomatoes
  • 1/4 cup chopped Italian flat leaf parsley

Instructions

  1. In a large pot of boiling salted water, cook spaghetti according to directions to al dente texture.
  2. While pasta is cooking, heat a large saute pan over medium heat. Add bacon and cook until crisp. Remove from pan and mince. Set aside.
  3. Right before pasta is finished cooking, remove all but about 1 tablespoon of bacon grease and return pan to medium heat. Add garlic and saute for about 30 seconds and mix in bacon. Turn off heat.
  4. Remove pasta from pot with tongs and transfer to pan with garlic and bacon. Add in beaten eggs, cheese and black pepper and mix thoroughly until egg mixture is coating the pasta.
  5. Mix in tomatoes and parsley. Serve immediately with extra grated cheese, if desired.

I'm the exact opposite of you when it comes to eggs. I didn't do runny eggs AT ALL until I married Tim, who somehow succeeded in convincing me that they are glorious. Now I can't get enough.. Making up for lost time, I suppose ;). Tim LOVES spaghetti carbonara and it's def our go-to quick and easy weeknight meal. It's one of the reasons why bacon is in my freezer at all times!

I have actually never had carbonara because of the bacon or pancetta in it, but your version with those gorgeous tomatoes looks amazing and like the perfect opportunity to make it even without the bacon. I hope that's not a sin ;-)
